I really like black and white because it changes the way you look at an image and gives it a completely different feel than a color image. It's not so much that it's photography in its most basic form, but by removing color from the image you strip it down to its most basic elements -- light and shadow, where everything becomes shapes and textures that you use to balance off each other.
I think black and white doesn't get used much because skiing is such a dynamic, colorful sport that it's easy to overlook the possibilities of capturing it in black and white.
